Technically the iPhone OS multi-tasks, since it can manage (at least on the iPad) to be able to play music while browing the internet. It isn’t productively multi-tasking since some programs can’t be run with others, but single-tasking refers to CPU management that can only do one thing at a time (see DOS/command-line OSes).
